Creamy Chorizo Gnocchi
This is a super quick and easy alternative to pasta. Ready in under 20 minutes, it’s perfect for a tasty midweek dinner.

Ingredients
- 150 g Chorizo diced
- 1 Small red onion diced
- 1 Small red pepper diced
- 4 Cloves of garlic chopped
- 150 ml Chicken stock
- 1 tbsp Tomato paste
- 100 g Cream cheese
- 400 g Gnocchi
- 40 g Parmesan grated + extra for garnish
- 25 g Fresh basil torn
Instructions
- Heat a small amount of oil in a large frying pan, then cook the chorizo over a medium to high heat for a few minutes until it starts to turn crispy.
- Add in the red onion and red pepper and cook until it softens. About 4 minutes.
- Chuck in the garlic and cook for a minute before adding in the chicken stock, tomato paste and cream cheese. Stir well then turn the heat down to a low-medium.
- Cook the gnocchi as per the packet instructions. It will usually cook in salted boiling water in 2-3 minutes. Drain it but keep some of the water in case you need to use to to loosen up the sauce.
- Add the cooked gnocchi into the sauce and stir to coat. Add in the grated parmesan and fresh basil and stir well. Taste for seasoning then dish it up, and finish with more grated parmesan.

Quick, easy and super tasty! Added frozen peas and should try a handful of spinach next time! First recipe I’ve tried and will definitely try out some others!
Loved this so much first time making again tonight. Husband not a big gnocchi fan but he enjoyed this.
Love this. Made it for dinner and the family loved it. Made no changes to the recipe except to add a little black pepper and chili for spice.

loved the sauce, not so keen on the Gnocchi, think it’s a texture thing!!! I will do the sauce again but with pasta instead
