Chicken and Chorizo Tray Bake

Ingredients
- 6 Chicken thigh pieces with the skin on
- 240 g Chorizo
- 2 Red onion
- 1 Large courgette
- 2 Red peppers
- 5 Cloves of garlic
- 6 Medium sized potatoes
- 1 Bunch of fresh rosemary
- Olive oil
Instructions
- Preheat the oven to 200℃
- Get all of your ingredients ready. Slice the chorizo into pound coin size pieces. Peel the red onions and cut them into wedges. Cut the courgette into large chunks. Cut the red pepper into quarters and then each quarter in half. Cut the potatoes into wedges and finally use the back of a knife to slightly crush the garlic cloves.
- In a large, deep oven dish place the onion, garlic, chorizo, peppers and courgette onto the bottom.
- Spread the chicken thighs over the top and then place the potato wedges around the chicken.
- Sprinkle the rosemary leaves over the top. Drizzle with olive oil and season.
- Place into the oven for 50 minutes, until the chicken is crispy and golden and the potato wedges are cooked. You can baste the chicken with the juices half way through if you like.
- Serve the chicken over the top of the roasted veggies and potato wedges.
