One Pan Lemon and Herb Salmon with Veggies

Ingredients
- 4 Large salmon fillets
- 1 Bunch of fresh oregano
- 1 Bunch of fresh basil
- 1 Bunch of fresh rosemary
- 2 tbsps Olive oil
- 5 Garlic cloves crushed
- 2 Lemons
- 300 g Chestnut mushrooms
- 300 g Cherry tomatoes
- 2 Large courgette
- 3 Mixed peppers
Instructions
- Preheat the oven to 200℃
- Finely chop the herbs and place them into a mixing bowl. Add the zest and juice of the lemons, the crushed garlic cloves and a glug of olive oil. Mix well.
- Coat the Salmon fillets in the herby marinade and set aside whilst you get the vegetables ready.
- Cut the chestnut mushrooms into halves. Cut the cherry tomatoes into halves. Slice the peppers into cm thick slices. Chop the courgette into chunks.
- Toss the chopped vegetables with some olive oil and seasoning.
- Place the veggies onto a large baking tray and place the marinated salmon fillets on top.
- Bake in the oven for 20 minutes, the salmon will be cooked and the tomatoes will be bursting.
- Serve, and enjoy!
