One Pan Lemon and Herb Salmon with Veggies

Save on washing up with this one pan healthy dish.

Ingredients

  • 4 Large salmon fillets
  • 1 Bunch of fresh oregano
  • 1 Bunch of fresh basil
  • 1 Bunch of fresh rosemary
  • 2 tbsps Olive oil
  • 5 Garlic cloves crushed
  • 2 Lemons
  • 300 g Chestnut mushrooms
  • 300 g Cherry tomatoes
  • 2 Large courgette
  • 3 Mixed peppers

Instructions

  • Preheat the oven to 200℃
  • Finely chop the herbs and place them into a mixing bowl. Add the zest and juice of the lemons, the crushed garlic cloves and a glug of olive oil. Mix well.
  • Coat the Salmon fillets in the herby marinade and set aside whilst you get the vegetables ready.
  • Cut the chestnut mushrooms into halves. Cut the cherry tomatoes into halves. Slice the peppers into cm thick slices. Chop the courgette into chunks.
  • Toss the chopped vegetables with some olive oil and seasoning.
  • Place the veggies onto a large baking tray and place the marinated salmon fillets on top.
  • Bake in the oven for 20 minutes, the salmon will be cooked and the tomatoes will be bursting.
  • Serve, and enjoy!
