Gingerbread Men

Make your very own gingerbread men this Christmas.

Ingredients

  • 350 g Plain flour
  • 1 tsp Bicarbonate of soda
  • 125 g Butter
  • 2 tsps Ground ginger
  • 1 tsp Ground cinnamon
  • 1 tsp Allspice
  • 1 tsp Ground cloves
  • 180 g Soft brown sugar
  • 1 Large egg lightly beaten
  • 4 tbsps Golden syrup
To decorate:
  • Multi coloured writing icing optional

Instructions

  • Preheat the oven to 170℃.
  • Add the flour, bicarbonate of soda and butter into a large mixing bowl. Use the rubbing in method to rub together the ingredients until it resembles a fine crumb.
  • Add the soft brown sugar and the spices and mix well.
  • Next, add the egg and the golden syrup. Use a spoon to mix it in as much as you can. Eventually you will need to get stuck in with your hands.
  • Use your hands to clump the dough together until it is one large piece.
  • Lightly flour a clean surface, tip the dough out and knead for a few minutes until the dough is silky smooth.
  • Pat into the shape of a 'puk'. Cover in cling film and place the dough into the fridge for at least 20 minutes.
  • Roll the dough out on a floured surface until it is approx 1/2 cm thick.
  • Use christmas themed biscuit cutters to cut shaped out of the dough.
  • Place them onto a lined baking tray and place into the oven for 10-12 minutes.
  • Leave the biscuits to cool on the tray for five minutes before transferring to a cooling rack. Let them cool completely before decorating.
  • Decorate the biscuits in any way you like.
  • Enjoy!
