Preheat the oven to 170℃.
Add the flour, bicarbonate of soda and butter into a large mixing bowl. Use the rubbing in method to rub together the ingredients until it resembles a fine crumb.
Add the soft brown sugar and the spices and mix well.
Next, add the egg and the golden syrup. Use a spoon to mix it in as much as you can. Eventually you will need to get stuck in with your hands.
Use your hands to clump the dough together until it is one large piece.
Lightly flour a clean surface, tip the dough out and knead for a few minutes until the dough is silky smooth.
Pat into the shape of a 'puk'. Cover in cling film and place the dough into the fridge for at least 20 minutes.
Roll the dough out on a floured surface until it is approx 1/2 cm thick.
Use christmas themed biscuit cutters to cut shaped out of the dough.
Place them onto a lined baking tray and place into the oven for 10-12 minutes.
Leave the biscuits to cool on the tray for five minutes before transferring to a cooling rack. Let them cool completely before decorating.
Decorate the biscuits in any way you like.
