Cacio e Pepe
Cacio e pepe translates to ‘cheese and pepper’. This pasta dish is a classic from Rome, using just pasta, cheese, pepper and the starchy pasta water. A store cupboard favourite.

Ingredients
- 250 g Spaghetti
- 60 g Parmesan
- 2 tsps Cracked black pepper
Instructions
- Drop the pasta into salted boiling water and cook for two minutes less than the packet states.
- Meanwhile, grate the parmesan into a bowl. When the pasta is almost done, add a ladle of pasta water into the cheese and beat it until you have a smooth paste.
- Crack some black pepper, then toast it in a dry pan for 30 seconds.
- Add the pasta along with some of the starchy water and give it a stir.
- Pour in the cheese paste and mix it well until you have a creamy sauce. Add more pasta water if needed.
- Dish it up and enjoy!
