Drop the pasta into salted boiling water and cook for two minutes less than the packet states.
Meanwhile, grate the parmesan into a bowl. When the pasta is almost done, add a ladle of pasta water into the cheese and beat it until you have a smooth paste.
Crack some black pepper, then toast it in a dry pan for 30 seconds.
Add the pasta along with some of the starchy water and give it a stir.
Pour in the cheese paste and mix it well until you have a creamy sauce. Add more pasta water if needed.
