Teriyaki Salmon Skewers

Ingredients
- 1 tbsp Cornflour
- 200 ml Water
- 5 tbsp Soy sauce
- 80 g Soft brown sugar
- 1 tbsp Mirin
- 1 Garlic clove minced
- 10 g Ginger minced
- 500 g Salmon
- 4 Spring onions each one cut into 3 pieces
To serve:
- 2 Spring onions sliced
- 1 tsp Sesame seeds
Instructions
- Start by making the teriyaki sauce. Add the cornflour to the water and mix well. Pour it into a saucepan then add the soy sauce, soft brown sugar, mirin, garlic, and ginger.
- Cook over a medium to high heat, whilst stirring often, until the sauce thickens. Take it off the heat and leave to cool slightly.
- Take the skin off the salmon, then cut it into bite sized pieces and add it into a mixing bowl.
- Pour half of the teriyaki sauce over the salmon and stir well to coat.
- Skewer the salmon, followed by a piece of spring onion, alternating until you have 4 complete skewers.
- Heat some oil in a large frying pan over a medium to high heat. Cook the salmon skewers for a few minutes on each side, until cooked through. Brush over some of the remaining teriyaki sauce.
- Serve the skewers with rice, and vegetables then finish by sprinkling over some sliced spring onions and sesame seeds. Add more teriyaki sauce if you like. Enjoy.
