Ingredients

  • 140 g Butter
  • 120 g Soft brown sugar
  • 60 g Granulated sugar
  • 1 Egg
  • 280 g Plain flour
  • 60 g Cocoa powder
  • 2 tsp Baking powder
  • 1/2 tsp Bicarbonate of soda
  • 200 g White chocolate chips

Instructions

  • Preheat the oven to 170C (fan).
  • Melt the butter in a saucepan over a medium heat.
  • In a large mixing bowl add the soft brown sugar and granulated sugar. Pour in the melted butter and whisk until it’s well combined.
  • Add the egg and beat it in, then add the plain flour, cocoa powder, bicarbonate of soda, and baking powder and fold it through.
  • Chuck in the chocolate chips and mix them through.
  • Use your hands to roll the dough into balls, then flatten them slightly into rough cookie shapes.
  • Place them onto lined baking trays, spaced apart to allow for spreading.
  • Bake them for 13-15 minutes, then take them out and allow to cool slightly before transferring them to a cooling rack to cool completely. Enjoy!

    I made these cookies with my grandchildren it was very easy to follow the recipe, not too sticky to roll (a bonus) and the end result was delicious.
