Bacon Wrapped Chicken Traybake

Tasty chicken and delicious vegetables all cooked in one pan.

Ingredients

  • 2 Aubergine
  • 2 Courgettes
  • 2 Red onions
  • 4 Large tomatoes
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Oregano
  • 2 tbsp Olive oil
  • 8 Chicken thigh fillets
  • 8 Rashers of streaky bacon
  • 400 g Tin of chopped tomatoes

Instructions

  • Preheat the oven to 200C.
  • Cut the aubergine, courgette, red onions, and large tomatoes into roughly 2cm chunks. Toss the veggies with salt, pepper, oregano, and olive oil.
  • Tip the veggies into a roasting tray and roast for 10 minutes.
  • Meanwhile, wrap the chicken thigh fillets each in a piece of streaky bacon.
  • Take the veggies out, then stir in the tin of chopped tomatoes. Place the bacon wrapped chicken on top, then pop it back into the oven for another 30 minutes, or until the chicken is cooked through.

    I have followed and done so many of Jon’s recipes they are amazingly flavoured and easy to follow and this is coming from some1 who has eaten out for last 3 xmas as can’t cook, but this site has inspired me to cook also given me the confidence to do so and enjoy it too. Have never meet you jon but thank you for your input in my kitchen, it has improved the quality of food iam able to provide for my children which they can not just recognise as food but actually love it too. Can’t wait for your cook book I have been waiting so so long. That’s something too I have never bought a cook book but will b buying this 1 and any others he does xx
