Braised Red Cabbage with Apple and Chorizo

Ingredients
- 200 g Chorizo diced
- 2 tsp Fennel seeds
- 1 Red onion sliced
- 2 Apples diced
- 500 g Red cabbage shredded
- 1 Orange
- 6 tbsp Balsamic vinegar
Instructions
- Fry the chorizo over a medium to high heat until it starts to turn crispy.
- Add in the red onion and fennel seeds then cook for a couple of minutes.
- Add the diced apples and shredded red cabbage and stir well.
- Now add the zest and juice of the orange before pouring in the balsamic vinegar.
- Stir well then cover with foil. Turn the heat down to a low- medium heat and cook for 25 minutes, stirring occasionally along the way.
- Dish it up and enjoy.

Tastes delicious I have made mine in advance to freeze, though I see chorizo shouldn’t be frozen . Hoping it will be ok.
