Braised Red Cabbage with Apple and Chorizo

Ingredients

  • 200 g Chorizo diced
  • 2 tsp Fennel seeds
  • 1 Red onion sliced
  • 2 Apples diced
  • 500 g Red cabbage shredded
  • 1 Orange
  • 6 tbsp Balsamic vinegar

Instructions

  • Fry the chorizo over a medium to high heat until it starts to turn crispy.
  • Add in the red onion and fennel seeds then cook for a couple of minutes.
  • Add the diced apples and shredded red cabbage and stir well.
  • Now add the zest and juice of the orange before pouring in the balsamic vinegar.
  • Stir well then cover with foil. Turn the heat down to a low- medium heat and cook for 25 minutes, stirring occasionally along the way.
  • Dish it up and enjoy.
