Fry the chorizo over a medium to high heat until it starts to turn crispy.
Add in the red onion and fennel seeds then cook for a couple of minutes.
Add the diced apples and shredded red cabbage and stir well.
Now add the zest and juice of the orange before pouring in the balsamic vinegar.
Stir well then cover with foil. Turn the heat down to a low- medium heat and cook for 25 minutes, stirring occasionally along the way.
Dish it up and enjoy.
