Caprese Chicken

Delicious and quick chicken with tomatoes, basil and mozzarella.

Ingredients

  • 2 Chicken breasts
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 Onion diced
  • 4 Cloves of garlic chopped
  • 100 ml Chicken stock
  • 200 ml Tomato passata
  • 1 tbsp Balsamic vinegar
  • 100 g Cherry tomatoes cut into halves
  • 15 g Basil
  • 125 g Ball of mozzarella cut into 4 slices
To garnish:
  • Balsamic glaze

Instructions

  • Slice the chicken breasts in half lengthways to give 4 fillets. Season with salt and pepper.
  • Pan fry over a medium-high heat until it’s golden on both sides. Once golden, remove the chicken from the pan and set aside.
  • Add in the onion and cook for 4-5 minutes, until it starts to soften. Chuck in the garlic and cook for a further minute.
  • Pour in the chicken stock, tomato passata and balsamic vinegar.
  • Stir through the cherry tomatoes and chopped basil. Pop the chicken on top, then lay a piece of mozzarella over each bit of chicken.
  • Cover with a lid or tin foil, then simmer for 4-5 minutes, until the mozzarella melts.
  • Dish it up and finish with a drizzle of balsamic glaze.

    Quick and easy to make but tasty. I add too much passata as was talking to my LO but it don’t take anything away from the dish it was just more saucy than shown

  2. Smells amazing! Havent even tried it yet but i cant wait! Shame you dont give instructions on the potatoes but im sure i can work it out!
    My house smells of garlic and i LOVE it! 🙂
