Chocolate Brownie Cookies

Ingredients
- 100 g Soft brown sugar
- 100 g Granulated sugar
- 60 g Cocoa powder
- 120 g Butter melted
- 2 Medium eggs
- 2 tsp Vanilla extract
- 150 g Plain flour
- ½ tsp Baking powder
- 200 g Chocolate chips mixed
Instructions
- Preheat the oven to 175C Fan. Line two large baking trays with baking paper.
- In a large mixing bowl, add the soft brown sugar, granulated sugar, and cocoa powder. Use a whisk to mix it together.
- Pour in the melted butter and beat for a couple of minutes.
- Add in the eggs and vanilla extract and beat it for a couple more minutes, until it’s well combined.
- Sift in the flour and baking powder, then fold it through until you have a fudgy brownie texture.
- Chuck in the chocolate chips and fold them through.
- Use two spoons or an ice cream scoop to scoop out equal sized portions of the dough. Lay them out on the lined baking trays leaving a bit of space between each one.
- Use your hands, or the back of a spoon to flatten them slightly.
- Bake them for ten minutes, they will look slightly underbaked, but this is how they are supposed to look.
- Leave them to cool for ten minutes on the tray before transferring to a cooling rack to cool completely.
