Ingredients

  • 100 g Soft brown sugar
  • 100 g Granulated sugar
  • 60 g Cocoa powder
  • 120 g Butter melted
  • 2 Medium eggs
  • 2 tsp Vanilla extract
  • 150 g Plain flour
  • ½ tsp Baking powder
  • 200 g Chocolate chips mixed

Instructions

  • Preheat the oven to 175C Fan. Line two large baking trays with baking paper.
  • In a large mixing bowl, add the soft brown sugar, granulated sugar, and cocoa powder. Use a whisk to mix it together.
  • Pour in the melted butter and beat for a couple of minutes.
  • Add in the eggs and vanilla extract and beat it for a couple more minutes, until it’s well combined.
  • Sift in the flour and baking powder, then fold it through until you have a fudgy brownie texture.
  • Chuck in the chocolate chips and fold them through.
  • Use two spoons or an ice cream scoop to scoop out equal sized portions of the dough. Lay them out on the lined baking trays leaving a bit of space between each one.
  • Use your hands, or the back of a spoon to flatten them slightly.
  • Bake them for ten minutes, they will look slightly underbaked, but this is how they are supposed to look.
  • Leave them to cool for ten minutes on the tray before transferring to a cooling rack to cool completely.
