Honey Mustard Chicken

You won’t believe how quick and easy this is to make, and it’s SO delicious.

Ingredients

  • 2 Chicken breasts
  • 100 g Plain flour
  • 2 tbsp Cooking oil
  • 20 g Butter
For the sauce:
  • 1 Onion diced
  • 2 Cloves of garlic chopped
  • 100 ml Chicken stock
  • 2 tbsp Honey
  • 2 tbsp Wholegrain mustard
  • 150 ml Double cream
  • 1 Small bunch of parsley chopped

Instructions

  • Cut the chicken breasts in half lengthways to make 4 thinner fillets.
  • Season the flour with salt & pepper, then coat each piece of chicken.
  • Heat the cooking oil and butter in a large frying pan over a medium to high heat. Pan fry the chicken until it is golden brown on both sides.
  • Remove the chicken from the pan and set it aside. Now turn the heat down to a medium heat, add the diced onion into the same pan and cook for about 5 minutes until it starts to soften.
  • Add the garlic and cook for a further minute.
  • Pour in the chicken stock, add the honey and mustard. Bring it to the boil.
  • Pour in the cream and get the chicken back into the pan. Give it a stir.
  • Cook it for a few minutes, stirring occasionally until the sauce thickens.
  • Add in the chopped parsley, then taste for seasoning.
  • Dish it up and enjoy!

    First time I have tried this recipe- absolutely loved it.
    I changed out the double cream for free from coconut cream which was excellent and now I’m hooked on making more of Jons recipes.

    I made this dinner this week for my family and it was a big hit with them. Quick and easy to make. Would I be able to make this in a slow cooker? I am thinking I could add some cornflour at the end to thicken the sauce but would double cream be okay to use for a slow cook?

      This one is quick to make without the slow cooker, although you could improvise and use it if you wanted. Chicken thighs will work better.

    so , so lovely and so, so easy to make. Can we freeze this ? I like to batch cook things and it would be great to know what I can freeze and what I can’t.

    1. Thank you! I’m glad you like it. It will freeze well, just take it out of the freezer and pop it into the fridge the day before you use it.
