Chinese Salt & Pepper Chips

Ingredients
For the chips:
- 800 g Maris piper potatoes
- 50 g Cornflour
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Paprika
- 2 tbsp Vegetable oil
For the seasoning:
- 1 Onion rough chopped
- 1 Red chilli sliced
- 1 Green chilli sliced
- 1 tbsp Chinese five spice
- 1 tsp Salt
- 1 tsp Black pepper
- 5 Spring onions chopped
- 4 Cloves of garlic minced
Instructions
- Preheat the oven to 200 °C, Line a large baking tray with baking paper.
- Cut the potatoes into chips, you can leave the skin on.
- Sprinkle the cornflour, salt, pepper and paprika over the chips and toss to coat.
- Scatter them onto the lined baking tray, spreading them out as much as possible. Drizzle them with oil.
- Cover them with foil and bake for ten minutes, then remove the foil and pop them back in for another 20 minutes.
- Take them out, turn them over and bake for about ten more minutes until they are golden and crispy.
- Heat some oil in a large frying pan or a wok, over a high heat stir fry the onion and chillies for a minute.
- Add the salt, pepper and Chinese five spice and cook for another minute.
- Turn the heat down slightly then add in the spring onions and chopped garlic.
- Cook for one more minute before chucking the chips in and tossing it all together. Dish them up and enjoy.
