Preheat the oven to 200 °C, Line a large baking tray with baking paper.
Cut the potatoes into chips, you can leave the skin on.
Sprinkle the cornflour, salt, pepper and paprika over the chips and toss to coat.
Scatter them onto the lined baking tray, spreading them out as much as possible. Drizzle them with oil.
Cover them with foil and bake for ten minutes, then remove the foil and pop them back in for another 20 minutes.
Take them out, turn them over and bake for about ten more minutes until they are golden and crispy.
Heat some oil in a large frying pan or a wok, over a high heat stir fry the onion and chillies for a minute.
Add the salt, pepper and Chinese five spice and cook for another minute.
Turn the heat down slightly then add in the spring onions and chopped garlic.
Cook for one more minute before chucking the chips in and tossing it all together. Dish them up and enjoy.
