Sausage Casserole

Ingredients

  • 8 Good quality sausages
  • 1 Red onion diced
  • 150 g Chorizo roughly chopped
  • 100 g Carrot diced
  • 100 g Swede diced
  • 5 Cloves of garlic chopped
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 Red pepper roughly chopped
  • 150 ml Red wine optional
  • 1 Tin of chopped tomatoes
  • 2 tbsps Tomato pureé
  • 200 ml Vegetable stock
  • 1 Tin of beans I used cannellini
  • 150 g Kale stalks removed

Instructions

  • Heat a little oil in a large casserole pan, fry the sausages over a medium heat until they are nicely browned all over.
  • Once browned, remove the sausages from the pan and set them aside.
  • In the same pan, add the diced red onion and cook for one minute.
  • Add the chorizo, carrot and swede and cook for a further few minutes, stirring occasionally.
  • Next, add the garlic, paprika, oregano and red pepper. Cook for one minute.
  • Pour in the red wine and let it bubble away until it has reduced by half.
  • Once reduced, add the tin of chopped tomatoes, tomato pureé and vegetable stock.
  • Add the sausages back into the pan. Bring it to the boil and then turn down to a simmer. Cook for 10-12 minutes. with the lid on. If you don't have alid then cover it with tin foil.
  • Next, add the kale and the beans. Stir together and cook for about 5 minutes. No need for the lid this time.
  • Taste for seasoning and then it is ready to serve.

    I found this recipe by chance when googling some ingredients that I had and wanted to use up. I found the recipe well written and easy to follow (it is a rare skill, that not many chefs manage!), and I loved the end result. Really tasy , I will definit;ey be making this again, and have now bookmarked and will be trying out some of your other recipes too.

    Really tasty casserole. Wasn’t sure what type of paprika to use so I added 1/2 tsp of normal paprika & 1/2 tsp sweet smoked paprika. The carrot was a bit crunchy too, so next time I’d dice it even finer, or maybe cook in a slow cooker 🤷 didn’t have any swede.

    Nice and easy. I’ve also made it without some of the ingredients (wine, carrot, suede) and it’s been just as good!

    1. Definitely going to be trying this, but will swap swede for squash of some kind (baaaad childhood experience of swede has put me right off, and am now I. My late 50’s!). I batch cook and freeze a lot of meals for the winter, so this is going to be amongst those this winter.
