Slow Cooker ‘Marry Me’ Chicken
Here’s how to make this ‘no fuss’ slow cooker version of the viral sensation, Marry Me Chicken. Goes well with rice, pasta, or potatoes!

Ingredients
- 500 g Chicken thigh fillets
- 1 Onion diced
- 150 g Sun dried tomatoes
- 2 Garlic cloves chopped
- 300 ml Chicken stock
- 2 tbsp Tomato paste
- 1 tsp Dried thyme
- 1 tsp Oregano
- 100 g Cream cheese
- 40 g Parmesan grated
- 15 g Fresh basil torn
Instructions
- Cut the chicken thigh fillets into bite sized pieces.
- Add the chicken into the slow cooker along with the onion, sun dried tomatoes, garlic, chicken stock, tomato paste, thyme, and oregano. Stir well, then cover with a lid and cook on high for 2 hours or low for 4 hours.
- Once cooked, add the cream cheese, Parmesan, and basil. Stir well and taste for seasoning.
- Dish it up with pasta, or whichever side you prefer. This is a versatile dish that will go well with almost anything. Finish with some more grated Parmesan (optional) and enjoy!!
