Cut the chicken thigh fillets into bite sized pieces.
Add the chicken into the slow cooker along with the onion, sun dried tomatoes, garlic, chicken stock, tomato paste, thyme, and oregano. Stir well, then cover with a lid and cook on high for 2 hours or low for 4 hours.
Once cooked, add the cream cheese, Parmesan, and basil. Stir well and taste for seasoning.
Dish it up with pasta, or whichever side you prefer. This is a versatile dish that will go well with almost anything. Finish with some more grated Parmesan (optional) and enjoy!!
