Teriyaki Chicken Stir Fry

Ingredients

  • 500 g Chicken thighs
  • 1 Red pepper cut into chunks
  • 4 tbsp Soy sauce
  • 4 tbsp Soft brown sugar
  • 1 tsp Cider vinegar
  • 1 tbsp Sesame oil
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste
  • 100 g Spring onions sliced
  • Sesame seeds for garnish optional

Instructions

  • Cut the chicken thighs into bite sized chunks.
  • Heat some cooking oil in a large frying pan. Add the chicken and stir fry over a high heat until its browned all over and cooked through. It should take about 5-6 minutes.
  • Add the chunky diced red pepper and stir fry for 2 minutes, until it starts to soften.
  • Add the soy sauce, soft brown sugar, cider vinegar, sesame oil, garlic and ginger paste.
  • Bring it to the boil and cook until it turns sticky.
  • Turn off the heat and stir through most of the spring onions, leave some for garnish.
  • Serve it with rice or noodles, and finish with a sprinkle of spring onion and sesame seeds.

  1. This was really good, I doubled up the sauce as I had more chicken that the recipe stated. I like that the sauce is mainly made up of store cupboard stuff, really handy. Will definitely be making again!

    Great recipe went down very well in our household. Will definitely be making it again. I don’t have a sweet tooth and found halving the sugar still gave it a nice sweetness and great taste.
