Preheat the oven to 200C.
Slice the potatoes two thirds of the way down, about 2mm apart. Be careful not to slice all the way through.
Pop them into a bowl and add the olive oil, salt, pepper, paprika, and thyme. Toss to coat, then tip the potatoes into an oven proof dish big enough so that each potato is flat on the bottom.
Roast the potatoes for about 45 minutes, or until they are golden and crispy.
