Add all the sauce ingredients to a jug and mix well until combined, then set aside.
Heat a large frying pan or wok over a high heat. Add the beef mince and cook for 5 to 6 minutes, breaking it up with a spoon until nicely browned and all the liquid has evaporated.
Add the sliced red pepper and chopped chilli. Stir-fry for 2 to 3 minutes until the pepper starts to soften.
Pour in the sauce and let it bubble away for a couple of minutes until it starts to reduce slightly.
Add the fresh egg noodles and sliced spring onions. Toss everything together for 2 to 3 minutes until the noodles are piping hot and coated in the sticky sauce. Add a splash of water if needed to loosen everything up.
Dish up and finish with toasted sesame seeds, extra sliced spring onions and some sliced red chilli.
