Creamy Cajun Sausage & Bacon Pasta

Smoky bacon, golden sausage, and a creamy Cajun sauce. Big comfort food flavours, but still on the table in about 20 minutes.

Ingredients

  • 200 g pasta
  • 150 g bacon lardons
  • 3 sausages skins removed
  • 1 onion diced
  • 1 tbsp tomato paste
  • 1 tbsp Cajun spice
  • 175 ml chicken stock
  • 100 g cream cheese
  • 30 g parmesan grated (plus extra for serving)
  • 10 g parsley chopped

Instructions

  • Cook the pasta in salted boiling water for as long as the packet states.
  • Meanwhile heat some olive oil in a large frying pan over a medium-high heat. Add the bacon and cook for a few minutes until it starts to crisp.
  • Add the sausage meat, breaking it up with a spoon as it cooks. Fry for 4–5 minutes until nicely browned.
  • Add the diced onion and cook for another 4–5 minutes until softened.
  • Stir in the tomato paste and Cajun spice and cook for 30 seconds to wake up the spices.
  • Pour in the stock and add the cream cheese. Stir well and bring to a gentle simmer until the sauce becomes creamy.
  • Drain the pasta, reserving a splash of pasta water. Add the pasta to the pan and toss everything together until coated in the sauce. If needed, add a little pasta water to loosen it.
  • Finish with grated parmesan, chopped parsley, and plenty of black pepper.
