Cook the pasta in salted boiling water for as long as the packet states.
Meanwhile heat some olive oil in a large frying pan over a medium-high heat. Add the bacon and cook for a few minutes until it starts to crisp.
Add the sausage meat, breaking it up with a spoon as it cooks. Fry for 4–5 minutes until nicely browned.
Add the diced onion and cook for another 4–5 minutes until softened.
Stir in the tomato paste and Cajun spice and cook for 30 seconds to wake up the spices.
Pour in the stock and add the cream cheese. Stir well and bring to a gentle simmer until the sauce becomes creamy.
Drain the pasta, reserving a splash of pasta water. Add the pasta to the pan and toss everything together until coated in the sauce. If needed, add a little pasta water to loosen it.
Finish with grated parmesan, chopped parsley, and plenty of black pepper.
