Remove the sausage meat from the skins. Heat some cooking oil in a large frying pan over a medium to high heat. Add the sausage meat and use a wooden spoon or spatula to break it into smaller pieces. Cook until it’s browned all over.
Add in the onion and cook until it softens.
Chuck in the garlic and cook for a further minute.
Pour in the tinned tomatoes, double cream, and add in the gnocchi. Cover with a lid and simmer for 4-5 minutes, until the sauce thickens, and the gnocchi is cooked.
Sprinkle in the grated parmesan and fresh basil and stir well. Taste for seasoning then dish it up and finish with more grated parmesan. Enjoy.
