Heat a little oil in a large frying pan over a high heat. Add the minced beef and minced pork. Use a wooden spoon or spatula to break it up as much as possible.
Cook the mince until it’s browned all over. Keep cooking it over a high heat, stirring occasionally until the meat starts to caramelise and there is no more liquid left.
Remove it from the pan and set aside. Wipe the plan clean with a bit of paper towel.
Heat a little oil over a medium to high heat. Add the diced onion and cook for a few minutes until it starts to soften.
Add the garlic, ginger and chilli and cook for about 30 seconds before adding the sugar. Cook for another minute.
Now get the minced meat back into the pan and stir well.
Pour in the soy sauce, mirin, sweet chilli sauce and sesame oil.
Cook for a minute, then turn off the heat and add the shredded lettuce and spring onion. Stir it through then dish it up with rice or noodles.
