Heat some cooking oil in a large pot over a medium to high heat. Cook the onion for 4-5 minutes, or until it starts to soften.
Add in the minced beef, then use a wooden spoon or spatula to break it up. Cook until it’s browned all over.
Once the beef is browned, add in the red pepper, garlic, tomato paste, oregano, and paprika. Cook for a couple more minutes.
Pour in the tinned tomatoes and chicken stock. Give it a stir then chuck in the pasta and stir again.
Cook for 15 minutes, stirring often to stop the pasta from sticking to the bottom of the pan.
Once the pasta is cooked and it’s soaked up the sauce, add in the mascarpone and chopped parsley then stir it through.
Taste for seasoning then dish it up and finish with some grated parmesan.
