Heat some cooking oil in a large frying pan over a medium to high heat. Add the onion and cook for about 5 minutes, until it starts to soften.
Add in the chorizo and cook for a few more minutes until it starts to turn crispy.
Add the tomato paste and cook for one more minute before pouring in the tinned tomatoes. Rinse out the can with 200ml of water and pour that in too.
Simmer the sauce for about ten minutes over a medium heat.
Meanwhile, cook the pasta in salted boiling water for 2 minutes less than the packet states.
Once the pasta is al dente, add it into the sauce along with a little bit of pasta water. Stir well to coat the pasta.
Add in the fresh basil and mozzarella, stir it well, then taste for seasoning.
Dish it up, and finish with some grated parmesan.
