Sticky Gochujang Pork Noodles

Ingredients

  • 500 g minced pork
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • 2 tbsp gochujang
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 500 ml chicken stock
  • 250 g instant noodles
To serve:
  • Sesame seeds
  • Spring onion sliced
  • Crispy chilli oil

Instructions

  • Heat some oil in a large frying pan over a high heat. Add the minced pork and cook for 5-6 minutes, breaking it apart as it cooks, until browned and starting to caramelise.
  • Add the garlic and ginger and gochujang. Cook for another minute.
  • Add the soy sauce, honey, mirin and sesame oil. Stir it all together and cook for a minute until the pork is coated.
  • Pour in the chicken stock, then add the noodles. Bring it to a simmer and cook for 3-4 minutes, turning and separating the noodles with tongs as they soften.
  • Toss everything together over a high heat for another minute or two until the sauce thickens and becomes glossy, coating the pork and noodles.
  • Spoon into bowls and finish with the spring onion, sesame seeds, and crispy chilli oil if you like.
