Curried Chicken & Mango Slaw

Ingredients
- 2 Chicken breasts
- 2 tsp Curry powder
- 1 tbsp Olive oil
- 2 Limes
- 150 g Red cabbage finely shredded
- 75 g Carrot grated
- 75 g Sugar snap pea sliced
- 1 Mango diced
- 2 tbsp Mango chutney
Instructions
- Preheat the oven to 180 degrees Celsius.
- Cut the chicken breast into thin slices. Place the chicken into a bowl and add in the curry powder, olive oil and zest of the two limes (keep them for the juice later).
- Season the chicken with a pinch of salt and pepper, then stir to completely coat it.
- Line a baking tray with baking paper and spread the chicken out. Bake it for 12-15 minutes until it is cooked through. Leave it to stand and cool slightly.
- To make the slaw, in a large mixing bowl add the red cabbage, carrot, sugar snap pea and diced mango. Add in the mango chutney and juice of the two limes.
- Toss it together, then add in the chicken pieces and mix it in. You can break up the chicken slightly if you prefer.
- Serve it up and enjoy.
