Preheat the oven to 180 degrees Celsius.
Cut the chicken breast into thin slices. Place the chicken into a bowl and add in the curry powder, olive oil and zest of the two limes (keep them for the juice later).
Season the chicken with a pinch of salt and pepper, then stir to completely coat it.
Line a baking tray with baking paper and spread the chicken out. Bake it for 12-15 minutes until it is cooked through. Leave it to stand and cool slightly.
To make the slaw, in a large mixing bowl add the red cabbage, carrot, sugar snap pea and diced mango. Add in the mango chutney and juice of the two limes.
Toss it together, then add in the chicken pieces and mix it in. You can break up the chicken slightly if you prefer.
Serve it up and enjoy.
