Curried Chicken & Mango Slaw

Spiced pieces of chicken with a sweet mango slaw.

Ingredients

  • 2 Chicken breasts
  • 2 tsp Curry powder
  • 1 tbsp Olive oil
  • 2 Limes
  • 150 g Red cabbage finely shredded
  • 75 g Carrot grated
  • 75 g Sugar snap pea sliced
  • 1 Mango diced
  • 2 tbsp Mango chutney

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Cut the chicken breast into thin slices. Place the chicken into a bowl and add in the curry powder, olive oil and zest of the two limes (keep them for the juice later).
  • Season the chicken with a pinch of salt and pepper, then stir to completely coat it.
  • Line a baking tray with baking paper and spread the chicken out. Bake it for 12-15 minutes until it is cooked through. Leave it to stand and cool slightly.
  • To make the slaw, in a large mixing bowl add the red cabbage, carrot, sugar snap pea and diced mango. Add in the mango chutney and juice of the two limes.
  • Toss it together, then add in the chicken pieces and mix it in. You can break up the chicken slightly if you prefer.
  • Serve it up and enjoy.
