Creamy Garlic and Prawn Pasta

Ingredients
- 240 g Spaghetti
- 20 g Butter
- 200 g Raw king prawns
- 5 Garlic cloves chopped
- 1 Red chilli chopped
- 100 g Cherry tomatoes halved
- 75 ml White wine
- 120 g Mascarpone
- 15 g Parsley chopped
- 40 g Parmesan grated + extra for serving
Instructions
- Cook the pasta in salted boiling water for 2 minutes less than the packet states.
- When the pasta is about 4 minutes away from being cooked, heat the butter with a little cooking oil in a large frying pan over a high heat. When it’s hot, add the prawns and cook for 1 minute, stirring often.
- Turn the heat down to a medium, then add the chilli, garlic, and cherry tomatoes. Cook for 30 seconds, then pour in the white wine and reduce by half.
- Add the al dente pasta into the pan along with some of the pasta water.
- Then add the mascarpone, grated parmesan and chopped parsley and stir well until it’s nice and creamy. If it needs loosening up, then add a little bit more pasta water.
- Season to taste then dish it up and finish it with more parmesan.
