Creamy Garlic and Prawn Pasta

Super simple, delicious, and it takes less than 12 minutes to make.

Ingredients

  • 240 g Spaghetti
  • 20 g Butter
  • 200 g Raw king prawns
  • 5 Garlic cloves chopped
  • 1 Red chilli chopped
  • 100 g Cherry tomatoes halved
  • 75 ml White wine
  • 120 g Mascarpone
  • 15 g Parsley chopped
  • 40 g Parmesan grated + extra for serving

Instructions

  • Cook the pasta in salted boiling water for 2 minutes less than the packet states.
  • When the pasta is about 4 minutes away from being cooked, heat the butter with a little cooking oil in a large frying pan over a high heat. When it’s hot, add the prawns and cook for 1 minute, stirring often.
  • Turn the heat down to a medium, then add the chilli, garlic, and cherry tomatoes. Cook for 30 seconds, then pour in the white wine and reduce by half.
  • Add the al dente pasta into the pan along with some of the pasta water.
  • Then add the mascarpone, grated parmesan and chopped parsley and stir well until it’s nice and creamy. If it needs loosening up, then add a little bit more pasta water.
  • Season to taste then dish it up and finish it with more parmesan.
