Cook the pasta in salted boiling water for 2 minutes less than the packet states.
When the pasta is about 4 minutes away from being cooked, heat the butter with a little cooking oil in a large frying pan over a high heat. When it’s hot, add the prawns and cook for 1 minute, stirring often.
Turn the heat down to a medium, then add the chilli, garlic, and cherry tomatoes. Cook for 30 seconds, then pour in the white wine and reduce by half.
Add the al dente pasta into the pan along with some of the pasta water.
Then add the mascarpone, grated parmesan and chopped parsley and stir well until it’s nice and creamy. If it needs loosening up, then add a little bit more pasta water.
Season to taste then dish it up and finish it with more parmesan.
