Chicken & Broccoli Stir Fry

Ingredients
- 2 chicken breasts cut into bite sized pieces
- 1 tbsp corn flour
- 1/2 head of broccoli cut into florets
- 1/2 onion sliced
- 150 g mushrooms cut into quarters
For the sauce:
- 200 ml chicken stock
- 50 ml soy sauce
- 2 tbsp soft brown sugar
- 1 tbsp cornflour
- 15 g ginger grated
- 2 garlic cloves chopped
To serve: (optional)
- Spring onions sliced
- Sesame seeds
Instructions
- Cut the chicken into bite sized pieces, pop it into a bowl then coat it in the cornflour.
- Heat some cooking oil in a large frying pan over a medium to high heat, then cook the chicken until it’s browned all over.
- Remove the chicken from the pan and set aside.
- Add a little more oil, then add the onion, mushrooms, and broccoli. Cook for a few minutes, stirring occasionally until it starts to soften.
- Meanwhile make the sauce by adding all of the sauce ingredients into a bowl and mix to combine.
- Pour the sauce into the pan, then add the chicken and stir well.
- Cook for a few minutes, until the sauce starts to thicken and the chicken is warmed through.
- Serve with rice, the sprinkle over some sesame seeds and sliced spring onions. Enjoy!
