Chicken & Broccoli Stir Fry

Try this one for a simple stir fry that’s packed full of flavour! And it’s ready in 15 minutes!

Ingredients

  • 2 chicken breasts cut into bite sized pieces
  • 1 tbsp corn flour
  • 1/2 head of broccoli cut into florets
  • 1/2 onion sliced
  • 150 g mushrooms cut into quarters
For the sauce:
  • 200 ml chicken stock
  • 50 ml soy sauce
  • 2 tbsp soft brown sugar
  • 1 tbsp cornflour
  • 15 g ginger grated
  • 2 garlic cloves chopped
To serve: (optional)
  • Spring onions sliced
  • Sesame seeds

Instructions

  • Cut the chicken into bite sized pieces, pop it into a bowl then coat it in the cornflour.
  • Heat some cooking oil in a large frying pan over a medium to high heat, then cook the chicken until it’s browned all over.
  • Remove the chicken from the pan and set aside.
  • Add a little more oil, then add the onion, mushrooms, and broccoli. Cook for a few minutes, stirring occasionally until it starts to soften.
  • Meanwhile make the sauce by adding all of the sauce ingredients into a bowl and mix to combine.
  • Pour the sauce into the pan, then add the chicken and stir well.
  • Cook for a few minutes, until the sauce starts to thicken and the chicken is warmed through.
  • Serve with rice, the sprinkle over some sesame seeds and sliced spring onions. Enjoy!

        Thank you for this, it was delicious. I’m coeliac and I only needed to change the soy sauce to gf soy sauce. Keep up the great recipes Jon.
