Chicken Noodle Stir Fry

For those nights where you want a quick and delicious meal that uses only one pan!

Ingredients

  • 125 g Medium egg noodles
  • 1 Large chicken breast thinly sliced
  • 100 g Tenderstem broccoli
  • 80 g Baby corn
  • 100 g Chestnut mushrooms
  • 1 Yellow pepper
  • 2 Garlic cloves chopped
  • 5 g Ginger chopped
  • 3 tbsp Soy sauce
  • 2 tbsp Honey
To garnish (optional):
  • Spring onion sliced
  • Red chilli sliced

Instructions

  • Prepare the vegetables. Trim the broccoli and slice in half lengthways. Diagonally slice the baby corn. Cut the mushrooms in half and the bigger ones into quarters. Thinly slice the pepper.
  • Bring a pan of water to the boil, once boiling, turn the heat off and drop the noodle nests in. Leave to sit for 4 minutes, then drain in a colander.
  • Heat some oil in a large pan or a wok, stir fry the chicken over a high heat for 2-3 minutes.
  • Add the broccoli, baby corn, mushrooms and pepper and stir fry for 2 more minutes.
  • Chuck in the garlic and ginger and stir fry for 30 seconds.
  • Pour in the soy sauce and honey, then add in the noodles and toss to coat.
  • Stir fry for a further minute, then dish it up and enjoy!
