Ingredients
- 3 Ripe bananas
- 120 g Butter
- 2 Eggs beaten
- 200 g Golden caster sugar
- 250 g Plain flour
- 1 tsp Bicarbonate of soda
- ½ tsp Cinnamon
- 40 ml Milk
- 150 g Chocolate chips
Instructions
- Preheat the oven to 170C. Grease and line a 2lb loaf tin.
- Melt the butter in a saucepan over a medium heat. Once it’s melted set it aside and leave to cool.
- Peel the bananas, pop them into a mixing bowl and mash with a fork.
- Stir in the cooled butter then add in the sugar and eggs.
- Sift in the flour, bicarbonate of soda and cinnamon, fold it until combined.
- Pour in the milk and mix it well.
- Add the chocolate chips in, you can coat them in a tbsp of plain flour to prevent them from sinking.
- Spoon the batter into the lined baking tin then bake it for an hour, or until a skewer comes out clean.
- Leave it to cool in the tin for 15 minutes before transferring it to a cooling rack to cool completely.
- Once it’s cool, cut it into portions and enjoy.

Could I make this gluten free for my coeliac son?
Hi Carol, yes, I would recommend switching the flour for the doves farm gluten free flour.
I made this with gluten free plain flour & it was amazing, so moist & rose really well. Should have taken a photo! Thank you Jon, this is definitely a keeper ❤️
