Ingredients

  • 3 Ripe bananas
  • 120 g Butter
  • 2 Eggs beaten
  • 200 g Golden caster sugar
  • 250 g Plain flour
  • 1 tsp Bicarbonate of soda
  • ½ tsp Cinnamon
  • 40 ml Milk
  • 150 g Chocolate chips

Instructions

  • Preheat the oven to 170C. Grease and line a 2lb loaf tin.
  • Melt the butter in a saucepan over a medium heat. Once it’s melted set it aside and leave to cool.
  • Peel the bananas, pop them into a mixing bowl and mash with a fork.
  • Stir in the cooled butter then add in the sugar and eggs.
  • Sift in the flour, bicarbonate of soda and cinnamon, fold it until combined.
  • Pour in the milk and mix it well.
  • Add the chocolate chips in, you can coat them in a tbsp of plain flour to prevent them from sinking.
  • Spoon the batter into the lined baking tin then bake it for an hour, or until a skewer comes out clean.
  • Leave it to cool in the tin for 15 minutes before transferring it to a cooling rack to cool completely.
  • Once it’s cool, cut it into portions and enjoy.
