Chocolate Chip Shortbread

Ingredients
- 340 g Plain flour
- 220 g Unsalted butter cubed
- 2 Egg yolks
- 100 g Golden caster sugar plus extra for sprinkling
- 150 g Chocolate chips
Instructions
- Preheat the oven to 170℃
- Tip the flour into a large mixing bowl then add the butter. Rub the flour and butter between your fingers until the mixture looks like crumbs.
- Add the golden caster sugar and the chocolate chips and mix them in.
- Now add the egg yolks, then squish everything together to form a dough.
- Once it has all come together, flatten into a round shape, cover in cling film and chill in the fridge for 20 minutes.
- Take the dough out of the fridge and roll out to about 1 cm thick, cut into rounds using a 7cm round biscuit cutter
- Transfer the shortbreads onto a greaseproof lined baking tray and sprinkle with a little golden caster sugar.
- Bake in the oven for 20 minutes or until they are lightly golden
- Leave them to cool for five minutes in the tray before carefully transferring them to a cooling rack to cool completely.
- Once they are cool, they are ready to enjoy!
