Ingredients

  • 340 g Plain flour
  • 220 g Unsalted butter cubed
  • 2 Egg yolks
  • 100 g Golden caster sugar plus extra for sprinkling
  • 150 g Chocolate chips

Instructions

  • Preheat the oven to 170℃

  • Add the golden caster sugar and the chocolate chips and mix them in.
  • Now add the egg yolks, then squish everything together to form a dough.
  • Once it has all come together, flatten into a round shape, cover in cling film and chill in the fridge for 20 minutes.
  • Take the dough out of the fridge and roll out to about 1 cm thick, cut into rounds using a 7cm round biscuit cutter
  • Transfer the shortbreads onto a greaseproof lined baking tray and sprinkle with a little golden caster sugar.
  • Bake in the oven for 20 minutes or until they are lightly golden
  • Leave them to cool for five minutes in the tray before carefully transferring them to a cooling rack to cool completely.
  • Once they are cool, they are ready to enjoy!
