Preheat the oven to 170℃
Tip the flour into a large mixing bowl then add the butter. Rub the flour and butter between your fingers until the mixture looks like crumbs.
Add the golden caster sugar and the chocolate chips and mix them in.
Now add the egg yolks, then squish everything together to form a dough.
Once it has all come together, flatten into a round shape, cover in cling film and chill in the fridge for 20 minutes.
Take the dough out of the fridge and roll out to about 1 cm thick, cut into rounds using a 7cm round biscuit cutter
Transfer the shortbreads onto a greaseproof lined baking tray and sprinkle with a little golden caster sugar.
Bake in the oven for 20 minutes or until they are lightly golden
Leave them to cool for five minutes in the tray before carefully transferring them to a cooling rack to cool completely.
Once they are cool, they are ready to enjoy!
