Ingredients
- 450 g Halloumi
- 75 g Polenta
- 1 tbsp Olive oil
- 125 g Honey
- 1 Lime
- 1 Red chilli chopped
- 10 g Parsley chopped
Instructions
- Preheat the oven to 200C Fan.
- Cut the halloumi into chunky chips. Coat them in the polenta. If it’s not sticking then just dip the halloumi in cold water first.
- Lay the halloumi out spaced apart on a lined baking tray.
- Drizzle over the olive oil, then bake for 20 minutes, turning them over half way.
- Meanwhile, add the honey into a pan and bring it to the boil. Cook for a minute, then turn off the heat and stir through the zest and juice of the lime, chilli, and parsley. Stir well.
- When the halloumi is crispy and golden, serve immediately with a drizzle of the hot honey. Enjoy.
