Ingredients

  • 450 g Halloumi
  • 75 g Polenta
  • 1 tbsp Olive oil
  • 125 g Honey
  • 1 Lime
  • 1 Red chilli chopped
  • 10 g Parsley chopped

Instructions

  • Preheat the oven to 200C Fan.
  • Cut the halloumi into chunky chips. Coat them in the polenta. If it’s not sticking then just dip the halloumi in cold water first.
  • Lay the halloumi out spaced apart on a lined baking tray.
  • Drizzle over the olive oil, then bake for 20 minutes, turning them over half way.
  • Meanwhile, add the honey into a pan and bring it to the boil. Cook for a minute, then turn off the heat and stir through the zest and juice of the lime, chilli, and parsley. Stir well.
  • When the halloumi is crispy and golden, serve immediately with a drizzle of the hot honey. Enjoy.
