Preheat the oven to 200C Fan.
Cut the halloumi into chunky chips. Coat them in the polenta. If it’s not sticking then just dip the halloumi in cold water first.
Lay the halloumi out spaced apart on a lined baking tray.
Drizzle over the olive oil, then bake for 20 minutes, turning them over half way.
Meanwhile, add the honey into a pan and bring it to the boil. Cook for a minute, then turn off the heat and stir through the zest and juice of the lime, chilli, and parsley. Stir well.
When the halloumi is crispy and golden, serve immediately with a drizzle of the hot honey. Enjoy.
