One Pot Creamy Beef Pasta
The most delicious creamy beef pasta, and it’s all cooked in one pot!

Ingredients
- 1 Onion diced
- 250 g Minced beef
- 1 Red pepper diced
- 2 Cloves of Garlic chopped
- 1 tbsp Tomato paste
- 1 tsp Oregano
- 1 tsp Paprika
- 400 g Tin of tomatoes
- 500 ml Chicken stock
- 200 g Fusilli
- 80 g Mascarpone
- 10 g Parsley chopped
To serve:
- Grated parmesan optional
Instructions
- Heat some cooking oil in a large pot over a medium to high heat. Cook the onion for 4-5 minutes, or until it starts to soften.
- Add in the minced beef, then use a wooden spoon or spatula to break it up. Cook until it’s browned all over.
- Once the beef is browned, add in the red pepper, garlic, tomato paste, oregano, and paprika. Cook for a couple more minutes.
- Pour in the tinned tomatoes and chicken stock. Give it a stir then chuck in the pasta and stir again.
- Cook for 15 minutes, stirring often to stop the pasta from sticking to the bottom of the pan.
- Once the pasta is cooked and it’s soaked up the sauce, add in the mascarpone and chopped parsley then stir it through.
- Taste for seasoning then dish it up and finish with some grated parmesan.

I’ve just made this for the first time and it’s delicious. My husband, a light eater, has had seconds! I only had to buy minced beef; everything else I already had to hand and found this recipe because I had some marscapone to use up. I used frozen mixed peppers rather than fresh. I can see myself using this as a base recipe for different meats and/or vegetables. Looking forward to trying some of the other recipes here …

This is now a favourite in our house. My 7 year old who has always turned her nose up at pasta bakes ate a bowl and had 2nds last night! Tasty, quick and easy for a midweek meal!

Hi, It’s currently not something I can do. Creating and sharing these recipes is still very much a hobby in between my full time work. I hope that some day the recipe side of things will take over, in which case I will start to share these details. In the meantime i’d suggest using one of the apps that will calculate it for you.

Easy basic midweek recipe which a busy Grandma needed. Also fits in nicely with reducing meat and being quite economical. Worked a treat. Marscapone provided the essential creamy texture.
