Chicken Caesar Sandwich

Succulent chicken, with a simple Caesar salad, inside a toasted ciabattia bun. Filmed through my Meta glasses for a POV style recipe.

Ingredients

Chicken:
  • 2 small chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic granules
  • Salt and black pepper
Caesar dressing:
  • 4 tbsp mayonnaise
  • 2 tbsp Greek yoghurt
  • 30 g finely grated parmesan
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Juice of ½ lemon
To assemble:
  • 2 ciabatta rolls
  • 2 baby gem lettuces shredded
  • Parmesan shavings
  • Cracked black pepper

Instructions

  • Butterfly each chicken breast by slicing it horizontally, but not all the way through, then open it out. This helps it cook in about 6 minutes.
  • Season both sides with the paprika, garlic granules, onion granules, salt and pepper, then drizzle with the olive oil.
  • Heat a frying pan over a medium-high heat. Cook the chicken for around 3 minutes per side until golden and cooked through.
  • Meanwhile, mix all the dressing ingredients together.
  • Remove the chicken from the pan and rest for a minute while you toss the shredded lettuce with a couple of spoonfuls of the Caesar dressing.
  • Split the ciabatta rolls and place them cut side down in the pan to toast.
  • Slice the chicken.
  • Spread more Caesar dressing over the toasted ciabatta, add the dressed lettuce, pile on the sliced chicken, finish with plenty of parmesan shavings and a generous crack of black pepper.
